Spanish food recipes - Piperrada (Basque pepper omlette)

you will need
2 pepper (red, green or yellow) roasted, skinned and deseeded, then cut into strips
garlic finely chopped
1 small onion thinly sliced
2 large tomatoes peeled and seeded
serrano ham cut into strips
8 eggs, beaten

Heat some oil in a pan and add the garlic and onion, allow to cook for a few minutes. Now add the ham, tomatoes and peppers and fry for 15 minutes until most of the liquid has evaporated. Tip this mixture into a clean bowl and put to one side. In the frying pan heat a little oil and pour in the eggs. Cook gently until starting to set, then add the pepper mixture, cover the pan with a lid (or aluminium foil) and leave on a very low heat for 5 to 10 minutes to finish cooking.
